Spinach is among the highest-oxalate foods people eat regularly, and urinary oxalate is directly linked to calcium oxalate stone risk. But only about half of the oxalate in your urine comes from food at all — the other half your body makes itself. That single fact is missing from most advice about spinach, and it changes what avoiding it can achieve.
What oxalate is
Oxalate is a plant compound with no known useful function in the human body. It is waste, cleared by the kidneys. When it meets calcium in urine it can form calcium oxalate, the most common stone material.
Spinach appears in every list because it genuinely does contain a lot of it, along with rhubarb, beets, almonds, and a number of other plants.
The half you cannot avoid
In people without an underlying oxalate disorder, roughly half of urinary oxalate comes from diet and half from the body's own metabolism.
This is the part that reframes the question. Cutting spinach acts on a share of one half of the input. It is not nothing, and for someone excreting a lot of oxalate it may matter — but it is not a switch, and expecting it to be one is how people end up frustrated after eliminating foods they liked.
What the evidence establishes
Large cohort studies show that urinary oxalate behaves as a continuous variable against stone risk: there is no clean threshold below which you are safe and above which you are not. Risk rises across the range.
One figure that appears in the literature: people excreting more than about 25 mg of oxalate per day may benefit from reducing their output. Note carefully what that number describes — it is about oxalate in your urine, measured on a 24-hour collection. It is not a food target, and you cannot infer your value from what you ate.
The same literature notes that a single 24-hour collection can miss transient spikes, so one normal result does not prove oxalate is never a problem for you.
The measurement problem nobody mentions
If you look up how much oxalate is in spinach, you will find numbers that disagree — sometimes substantially — between sources that all look reputable.
Two separate reasons:
- Analytical method. Oxalate is measured several different ways, and they do not all agree. Older values are less reliable than newer ones, and some widely circulated tables trace back to decades-old measurements reported on a dry-weight basis, which overstates the amount in food as actually eaten.
- The plant genuinely varies. Work on accumulation patterns in spinach specifically found the oxalate content differs by variety and growing conditions. Two bags of spinach are not the same bag.
So treat any single number you are quoted for spinach as an estimate with real uncertainty around it, including the numbers in this paragraph.
What this page will not tell you
Whether to eat spinach. That depends on your stone type, your measured urinary oxalate, and — importantly — your calcium intake, because dietary calcium binds oxalate in the gut and changes how much reaches your kidneys at all. Those interact, and the interaction is the whole point.
